Apple Tart with Pumpkin Butter

Surprise !  Surprise !
Have a visitor in 45 minutes.
Grumble grumble...such short notice !!

You might find.......

Store bought flaky pastry
Some shrivelled up apples (best is Boskop)
Most important - Pumpkin Butter (or apricot jam)


1.  Heat up oven at 200°C
2.  Roll out pastry on a baking pan.  Crimp up all four corners/edges.
3.  Prick the centre with a fork and bake for 10 minutes.
4.  Peel, core apples and cut into 1.5 cm thick wedges.
5.  Sprinkle with lemon juice to prevent browning.
6.  Take pastry out of oven.   It should be puffed up but not brown.
7.  Arrange apple wedges on half baked pastry and brush apples with
     pumpkin butter.  In my case, I just spooned it over the middle in a line.

8.  Bake another 15 minutes.
9.  Serve hot with whipped cream or vanilla ice-cream.
