When I have lots of tomatoes, some old breads or cooked potatoes, here is what I usually do.
Some mince meat, old bread, cooked potatoes and a large onion.
Mince the onion, panfry with little oil till the brown with aroma. Mix with cooked potatoes and mince meat. Add seasonings like salt and pepper, pinch of sugar or broth powder. Stuff them into prepared tomatoes.
Place the filled tomatoes into a pan, add 1 cup of broth and cook/stew on medium heat for about 20 minutes. You may bake them in the oven but I prefer to 'stew' which is faster.
When done, thicken the sauce with cornstarch. Serve either with rice or grains like wheat or couscous.
