Fish risotto with stewed chicory

When one mention rice in Italy, Giovanni is not thinking of fried rice or sushi.  He is thinking of RISOTTO.  Risotto rice cooked not in rice cooker but in a pan.  The rice is cooked briefly in onion and olive oil and then white wine is added followed by stock. End result will be a kind of soupy cream rice with sprinkled or stirred-in grated Parmigiano cheese.

This was exactly what I had to for lunch - Risotto rice (without cheese) with codfish filet and stewed chicory.

Asparagus with Hollandaise sauce

Spring is asparagus season.  A very simple preparation involving heat and water.  Boil potatoes (and some carrots)and asparagus.  Serve with ready-made hollandaise sauce from 'Mr Thomy' :-)
Here, they're wrapped with cooked ham.
Frankly, I prefere asparagus crispy,  regardless whether they're white or green. - cooked the asian way.

Herbal Lunch

I was out in the garden looking for mint to make a refreshing chai.  Strangely, not a leaf in sight.  It must be the weird weather, hot and dry during the day with frosty nights.   Other herbs were sprouting quite happily and since herbs are healthy, curing every kind of sickness under the sun, I decided to make a herb salad for lunch.

Veal with Asparagus

Healthy and delicious, omitting potatoes or any carbo.
Slices of veal, quick panfried with olive oil but I didn't sacrifice on sauce - it was red wine and butter.

Salmon (Lachs) Tartar

I know I've been neglecting my blog lately.  Too busy with not too popular household demands like cleaning .......don't want to sound like a broken record. There are some positive changes in 2012 so it is a good start in this Dragon Year  I have taken on a new challenge and will stay busy - as always.

First post for 2012 is fish. Not 'yee sang' like the chinese to herald in the new year but a european version of 'yee sang'  -  Lachs (salmon) tartar on red beets and potato salad accompanied by chard and brussel sprouts which were pan fried in olive oil.  A sort of mediteranean 'diet' .  Super healthy dish .

YUMMY - Prawns and Truffel

I have finally made up my mind so off we went to Munich to finalize the purchase. While the papers were being processed, I went into the city for a round of Christmas Market tour in the city centre. Photos will be posted soon. After an hour of pushing crowds, decided to have a good lunch. And here is our lunch. Huge butter prawns on salad of sour cream red beets - with oven fresh baguette.
Linguine with Truffel cream sauce
Happy decision, happy tummy !

Strange Combi Salad

This is an almost perfect salad for a hot summer day. The combination might be strange but believe me, they marry well.

Corgettes

Somehow, there are only yellow corgettes growing in my garden this year.   Why?  Blame it on the freaky weather.
Cooool corgettes :-)

Fill them up with  mincemeat, bake for an hour at 180°C.   There was abit of mince left so I filled it into a red pepper to bake as well.

Viola !    Serve with rice and it's own sauce.

Vegetable Omelette - Daily Menu

It was simply too warm to go outdoor and the idea of driving into town to do some shopping is OUT !! For lunch family wanted something light without carbohydrates. Dug into the fridge and found a wrinkled red pepper, a corgette, a slice of smoked ham.  Plus the 'never run out of' items like onions, carrots and eggs.

Result.....Vegetable omelette with carrot salad

Mapo Tofu with Onion Flower/Bolt

I have plenty of onions growing in the garden.  Most people grow onion bulbs and as flowering causes a decrease in bulb size, the flower stalks will be nipped off soon as they appear.  I find it such a waste to throw them away. The flower stalks are tender and crunchy which goes very well with Mapo Tofu.

Kohlrab in White Sauce

Kohlrab is in season.   It is a very versatile 'root'......good as salad, quick stirfry with fishsauce or soysauce. For a typical german meal, I made pancakes and Kohlrab in white sauce.

Green Asparagus

We need rain.  Look how miserable the asparagus in my garden are growing.

Was dreaming of simple stirfry green asparagus with sambal paste, sprinkled with cashews.
